200 series stainless steel is based on chromium-nickel austenitic stainless steel, by adding manganese and/or nitrogen to the steel instead of the precious metal nickel and developed, austenitic elements, in addition to manganese and nitrogen, the manganese in the steel plays a role in stabilizing the austenite.

400 series stainless steel is an alloy of iron, carbon and chromium. 400 series stainless steel is a martensitic stainless steel with normal magnetic properties. 400 series stainless steel can be heat treated to improve hardness, and now common 400 series is used for making cookware products, exausting pipes, knife/foil/spoons and household appliances.
